
Marinated Artichoke Salad
Description
This is a great entree or light meal and travels well, making it ideal for picnics or a packed lunch for work. With only a few ingredients, this salad recipe is quite simple to make. But because of the few ingredients, make sure that the quality of each is spectacular.
Ingredients
- 1⁄2 lb mushrooms, cleaned and sliced
- 15 oz artichoke hearts, drained
- 1⁄2 c black olives
- 1 small red onion, chopped
- 4 green onions, chopped
- 2 tomatoes, cut in wedges
- 1⁄2 c feta cheese, crumbled
- 1 c olive oil
- 1⁄2 c red wine vinegar
- 2 t oregano
- 1 t black pepper
- 1 t salt
Instructions
Make dressing by mixing olive oil, vinegar, oregano, pepper and salt and set aside.
Mix all the vegetables, except tomatoes.
Pour dressing over vegetables, and refrigerate for two hours. Add tomatoes just before serving.
