
Seafood Bisque
Description
A delicious, rich soup to serve for special occasions as a first course or entree. Traditionally made with shellfish, seafood bisque often includes other fish varieties. Also touting lobster, crab, and shrimp, these easy soup recipes deliver creamy, rich seafood bisque fit for fish connoisseurs.
Ingredients
- 1⁄4 c butter
- 1⁄4 c diced green pepper
- 1⁄2 c fine chopped onion
- 1 c finely chopped celery
- 1⁄2 c flour
- 4 c milk
- 1⁄4 T white pepper
- 1⁄2 T paprika
- 1 pn cayenne pepper
- 1⁄8 c chopped parsley
- 2 c shrimp, lobster, crab or scallions
- 1⁄4 c dry sherry
Instructions
-saute onion, green pepper, celery in butter until lightly browned, 8-10 minutes. Reduce heat to low. Add flour and stir quickly until flour is
golden-5 minutes.
-slowly pour milk over vegetables. Whisk until flour dissolves. Add pepper, paprika, cayenne, parsley. Simmer and stir for 10 minutes until bisque thickens.
-add seafood and sherry. Cook 10 more minutes. Serve immediately.
